Essential oils are substances of vegetable origin, fragrant, volatile, soluble in fats, oils and organic solvents and insoluble in water. Because of their fat solubility they have been classified as oils, and for their perfume as essences.
Essential oils exhibit various types of biological activity. For external use, the two main properties are antiseptic and stimulating.
Essential oils are found in all parts of the plant: in the seed, in the root, in the wood, in the leaves, in the flowers and in the fruits and are produced with particular procedures that vary according to the type of essential oil, but all are based on the volatility and the fat solubility of essences. There are two groups of essential oils: the hot ones (thyme, pine) and the cold ones (mint, eucalyptus), so defined for the sensation they induce.
The most ancient procedure, now little used, is enfleurage, which consists in placing the vegetable (usually flowers) on a layer of fat, which is impregnated with odorous substances. The flowers are replaced as they run out, until a "floral ointment" is obtained, full of essential oils, which are extracted by means of a solvent.

ale technique, consists in bringing the vegetable into contact with water vapor, which carries the essential oils with it. After cooling, the vapor condenses in the form of water, above which a layer of essential oil floats. It is a modern technique that has the advantage of not using organic solvents, traces of which could remain in the oil, affecting its complete naturalness.
