Special and suitable for all types of pasta, it is adaptable to pasteurization and slow drying and requires higher humidity than traditional flours. Suitable for both manual and machine processing, it can be used without "precautions" even in extrusion.
Ingrediants
Swallowed wheat starch, potato starch, corn starch, vegetable fibers (psyllium, pea); thickeners: guar gum, hydroxypropylmethylcellulose.

Preparation
- Knead everything together until you get a homogeneous mixture.
- Let the dough rest for about 20 minutes.
- Roll out the dough into a thin leaf and cut into the desired pasta shape.
- Cook in salted boiling water for about 2 minutes.
