Gluten Free Pasta

The SAPORE DI PASTA company produces dry pasta using “unconventional” flours and a different production technology, in order to obtain a gluten-free product, rich in fiber and bring health benefits to the consumer. The goal was to produce a pasta usable both by the consumer with metabolic disorders such as celiac disease and by the ordinary consumer since the product contains INULIN, a dietary fiber that regulates the bacterial flora and rebalances the normal metabolic functioning. The product represents a valid choice for the lover of healthy food, without having to give up the typical taste of pasta since the COMPANY has not neglected the importance of the rheological and organoleptic characteristics of the pasta.

SAPORE DI PASTA pasta is a product obtained from the mixing and drawing of naturally gluten-free flours. The artisan production of pasta, using bronze dies and slow drying, makes the pasta, in color and consistency, equal to the "traditional" one.
The extrusion of the pasta through a bronze die and the use of high temperatures result in the creation of a protective film which helps to slow down the gelatinization of starches during cooking.

Cooking time plays a very important role. The pasta is cooked in just 3 - 4 minutes, thus optimizing the preparation time as well as reducing the quantity of gelatinized starch, i.e. a decrease in the glycemic index.
